Here's a quick and simple recipe from our Head Chef that is sure to be a winner at your next dinner party.
Tomato & Pasta Soup
Serves 8
Ingredients
1.25 lt chicken stock
1 cup spiral pasta
2 carrots, sliced
1 zucchini, sliced
4 ripe tomatoes chopped
Salt & pepper
Method
Place the chicken stock in a pot and bring to the boil.
Reduce the heat and add the pasta, carrot and zucchini.
Cook for 10 minutes, or until the pasta is al dente.
Add tomato and heat through gently for a few more minutes and season with salt & pepper to taste.
